Coconut Blueberry Oat Bake

My mom used to make this when I was a little girl. With fresh picked berries in the summer or a summery reminder in the winter months. She would serve it with a touch of cream in the bowl and it was such a comforting dish.

I hadn’t had it for years so I asked her for it the other day and the next time we saw each other there was a freshly written recipe card there for me.

I updated it a bit and added chia seeds, hemp hearts, I thought the coconut milk could be a nice substitute from dairy and added more coconut to it. I kept the butter and sugar in but I’m sure with a little experimenting you could sub those out too.

Such a treat for breakfast and also keeps really great and makes a nice midday snack…with tea. I added lemon zest because I love lemon and blueberry and topped mine with a generous dollop of tree island honey yogurt.

3/4 cup
Butter, melted
3/4 cup
Brown Sugar
3
Eggs
1 1/2 tsp
Vanilla
1 tsp
Lemon Zest
4 1/4 cups
Oats, Rolled
1/4 cup
Bran Wheat
3 tsp
Baking Powder
1/2 tsp
Allspice
pinch
Nutmeg
1/2 tsp
Cinnamon
1 tsp
Salt
2 tbsp
Hemp Hearts
1 tbsp
Chia Seeds
1/3 cup
Shredded Unsweetened Coconut
1 1/2 cups
Coconut Milk (can use Milk too)
1 cup
Apple, Peeled and Grated
1 1/2 cups
Blueberries
 
Nuts are nice to add as well.



Add the butter, sugar, egg, vanilla and lemon zest and blend together. Set aside.

In a separate bowl, combine the oats, bran, powder, spices, salt, hemp hearts, chia seeds and coconut.

Mix in the dry ingredients to the wet ingredients until just mixed, then add the shredded apple, and coconut milk.

Pour the ingredients into a buttered 9x13 pan. I spread blueberries on the top by the handful until the pan is covered with berries. Pat the blueberries lightly into the batter.

Bake at 350 ° for 20-25 minutes until the top is golden and you test it with a toothpick and it comes out clean.

Set aside till cooler before cutting or it will crumble.

I served this with a dollop of tree island yogurt and a little more lemon zest.
